Rogan Josh recipe to the rescue

Hello friends!

Personally, I find cooking lamb and especially goat, to be a bit intimidating.  But really, as I break it down, it’s simply a knowledge problem…I just don’t know how to do it.

Which means, there is an easy fix:  follow a recipe.

And lucky for me, my sister (better known as Auntie Cait around these parts) cooked us up some of the best Rogan Josh I’ve ever tasted.  Yum!  The kids practically licked their plates.


I’ve tried my hand at cooking several Indian dishes, and have had sub-par results.  But this one is a sure-fire winner.  This recipe can be made with lamb or with goat.  Highly recommend!

Here goes…

Rogan Josh recipe

3 1/2 T ghee (can substitute butter)

1 cinnamon stick

6 green cardamom pods, lightly bruised

4 cloves

1 large onion

3 cloves garlic

1 T ginger

5 T tomato purée

1 t salt

1 1/2 pounds boneless lamb shoulder

1 1/2 cups chicken stock


Spice Mix:

2 T paprika

4 t ground cumin

2 t turmeric powder

1 t garam masala

3/4 t chili powder

1/2 t fennel powder

1/4 t nutmeg


Garnishes:

Garam masala powder

Fennel powder

Plain yogurt

Chopped coriander leaves

Basmati rice
